BBQ Bacon Cheeseburger Meatloaf

Directions

  1. Preheat the oven: Set your oven to 190°C (375°F). Lightly grease a loaf pan or line a baking sheet with parchment paper.
  2. Mix the base: In a large bowl, combine ground beef, breadcrumbs, egg, milk, onion, garlic, salt, and pepper. Mix until just combined.
  3. Add cheeseburger flavors: Stir in shredded cheddar cheese, crumbled bacon, ketchup, mustard, and Worcestershire sauce.
  4. Shape the loaf: Transfer the mixture to the prepared pan or baking sheet and shape into a loaf.
  5. Prepare the glaze: In a small bowl, mix BBQ sauce, brown sugar, and smoked paprika.
  6. Glaze the top: Spread half of the BBQ glaze over the meatloaf.
  7. Bake: Place in the oven and bake for 45 minutes.
  8. Add more glaze: Remove from oven, spread the remaining glaze on top, and return to bake for an additional 15–20 minutes, until cooked through.
  9. Rest before slicing: Let the meatloaf rest for 5–10 minutes before slicing to retain its juices.
