Directions
- Cook the pasta:
Bring a large pot of salted water to a boil and cook the penne pasta according to package instructions until al dente. Drain and set aside. - Season the shrimp:
Pat the shrimp dry with paper towels and season with 1 tablespoon of Cajun seasoning. - Sear the shrimp:
Heat olive oil in a skillet over medium-high heat. Add shrimp and cook for 2–3 minutes per side until pink and slightly golden. Remove from the skillet and set aside. - Prepare the sauce base:
In the same skillet, melt butter over medium heat. Add minced garlic and sauté for about 1 minute until fragrant. - Make the Alfredo sauce:
Stir in heavy cream and milk. Add the remaining Cajun seasoning, onion powder, salt, and pepper. Simmer gently for 3–4 minutes. - Add the cheese:
Stir in Parmesan cheese and mozzarella, mixing until the sauce becomes smooth and creamy. - Combine pasta & sauce:
In a large bowl or baking dish, mix the cooked pasta with the Alfredo sauce and optional diced tomatoes or bell peppers for added color and flavor. - Assemble the bake:
Preheat your oven to 375°F (190°C). Spread the pasta mixture evenly in a baking dish. Arrange the cooked shrimp on top and sprinkle with extra mozzarella cheese. - Bake:
Place in the oven and bake uncovered for 15–20 minutes until bubbly and lightly golden on top. - Garnish & serve:
Remove from the oven and sprinkle with chopped parsley before serving hot.
