Directions

  1. Preheat oven: Preheat your oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish.
  2. Cook the beef: Heat olive oil in a skillet over medium heat. Add the ground beef and chopped onion, cooking until the beef is browned and the onions are soft. Drain excess fat.
  3. Add seasonings: Stir in garlic powder, salt, and black pepper, mixing until evenly combined. Remove from heat.
  4. Prepare the creamy mixture: In a large bowl, combine cream of mushroom soup, sour cream, and ¾ cup of shredded cheddar cheese. Mix until smooth.
  5. Combine beef and hash browns: Add the cooked beef mixture and thawed hash browns to the creamy mixture. Stir until everything is evenly coated.
  6. Assemble the casserole: Pour the mixture into the prepared baking dish, spreading it evenly. Sprinkle the remaining ¼ cup of shredded cheddar cheese on top.
  7. Bake: Bake in the preheated oven for 40–45 minutes, until bubbly and golden on top.
  8. Serve: Let the casserole cool for a few minutes before serving to allow it to set slightly.
