Directions
- Prepare the prawns:
Rinse prawns under cold water and pat dry. Using a sharp knife, split each prawn open along the back without detaching the shell completely. Remove the vein. - Make the garlic herb butter:
In a small bowl, whisk together melted butter, olive oil, minced garlic, lemon juice, lemon zest, parsley, Italian herbs, salt, and black pepper. - Preheat the grill:
Heat a grill or grill pan to medium-high. Ensure grates are clean and lightly oiled to prevent sticking. - Grill the prawns:
Brush the prawns generously with the garlic herb butter mixture. Place prawns shell-side down and grill for 4–5 minutes. Flip and grill for another 2–3 minutes until shells are a vibrant orange-red and the meat is opaque and juicy. Baste with extra butter while grilling for maximum flavor. - Serve:
Arrange prawns neatly on a platter. Drizzle with any remaining garlic herb butter and sprinkle with extra chopped parsley and herbs. Serve immediately with lemon wedges.
