Directions

  1. Preheat the Oven
Preheat your oven to 190°C (375°F). Line a baking sheet with parchment paper or lightly grease it.
  2. Prepare the Breading Stations
Place the flour in one shallow bowl. In another bowl, beat the eggs. In a third bowl, combine the Parmesan cheese, breadcrumbs, garlic powder, Italian seasoning, smoked paprika, salt, and pepper.
  3. Bread the Chicken
Pat the chicken breasts dry with paper towels. Coat each piece in flour, shaking off excess. Dip into the beaten eggs, then press firmly into the Parmesan-breadcrumb mixture to coat evenly on all sides.
  4. Pan-Fry the Chicken
Heat olive oil in a large skillet over medium heat. Add the breaded chicken and cook for 2–3 minutes per side, until lightly golden and crispy. Avoid overcrowding the pan.
  5. Finish in the Oven
Transfer the browned chicken to the prepared baking sheet. Bake for 15–20 minutes, or until the internal temperature reaches 74°C (165°F).
  6. Rest and Garnish
Remove from the oven and allow the chicken to rest for 5 minutes. Sprinkle with freshly chopped parsley before serving.
