  • 100 g feta cheese, crumbled (3.5 oz)
  • 60 g kalamata olives, pitted (½ cup)
  • 2 cups chopped romaine lettuce (100 g)

For the dressing

  • 3 tablespoons olive oil (45 ml)
  • 1 tablespoon red wine vinegar (15 ml)
  • 1 teaspoon Dijon mustard (5 g)
  • ½ teaspoon dried oregano (1 g)
  • ¼ teaspoon salt (1.5 g)
  • ¼ teaspoon black pepper (1 g)

For serving

  • 2 cups cooked quinoa or brown rice (400 g / 14 oz)
