Directions

  1. Prepare the Beets
    Wash the red beets thoroughly. Peel them and chop into small chunks. Smaller pieces help release more nutrients and speed up cooking.
  2. Simmer the Beets
    Place the chopped beets in a large pot with water. Bring to a boil, then reduce heat to a gentle simmer. Cook for 20–30 minutes, or until the beets are tender and easily pierced with a fork.
  3. Add Lemon and Ginger
    Peel and slice the ginger. Squeeze the juice of one lemon into the pot and add the ginger slices. Allow the mixture to simmer for an additional 5 minutes so the flavors infuse.
  4. Sweeten (Optional)
    Remove the pot from heat. Stir in 2–3 tablespoons of honey to taste, balancing the earthy flavor of the beets with natural sweetness.
  5. Strain and Serve
    Use a fine mesh strainer to remove solids, leaving only the bright, ruby-red liquid. Serve warm for a soothing tonic or chill for a refreshing beverage.
