Directions
- Grill the shrimp: Preheat a grill or grill pan to medium-high heat. Toss shrimp with olive oil, garlic powder, smoked paprika, onion powder, cayenne (if using), salt, and black pepper. Grill 2–3 minutes per side until pink and opaque. Remove and set aside.
- Prepare the fried rice: Heat vegetable oil in a large skillet or wok over medium-high heat. Sauté onions, garlic, and bell peppers for 2–3 minutes until softened.
- Add additional vegetables: Stir in carrots and peas (if using) and cook for another 2 minutes.
- Add the rice: Push vegetables to one side. Add cold rice, breaking up any clumps, and mix everything together.
- Scramble the eggs: Pour beaten eggs into empty space in the skillet, scramble, then combine with rice and vegetables.
- Season the fried rice: Stir in soy sauce, sesame oil, smoked paprika, salt, and black pepper. Mix until heated through and evenly coated.
- Assemble the dish: Spoon fried rice onto a serving dish and arrange grilled shrimp on top.
- Garnish: Sprinkle with green onions and fresh parsley or cilantro. Optionally, drizzle a little extra soy sauce or sesame oil for added flavor.
