- 4 cups chicken broth (960 ml) – or water for a lighter version
- 1 cup heavy cream (240 ml)
- 1 cup shredded sharp cheddar cheese (100 g)
- 2 tablespoons butter (30 g)
- Salt & black pepper, to taste
For the Seafood & Sauce
- 1 lb shrimp, peeled & deveined (450 g)
- ½ lb scallops (optional) (225 g)
- ½ cup smoked sausage, diced (75 g)
- ½ onion, chopped (50 g)
- 3 cloves garlic, minced (9 g)
- 1 can diced tomatoes with juice (400 g)
- 1 cup heavy cream (240 ml)
- ½ cup seafood broth or chicken broth (120 ml)
- ½ teaspoon smoked paprika (1 g)
- ½ teaspoon Cajun seasoning (1 g)
- ½ teaspoon Old Bay seasoning (1 g)
- ½ teaspoon crushed red pepper (optional)
- 1 tablespoon butter (15 g)
- 1 tablespoon olive oil (15 ml)
- 2 tablespoons chopped green onions, for garnish (10 g)
