Ingredients

For the Salmon & Stuffing

  • 2 large salmon fillets (skin-on or off)
  • ½ lb (225 g) shrimp, peeled, deveined, and chopped
  • ½ cup (60 g) lump crab meat
  • 2 tbsp (28 g) butter
  • 1 tsp garlic, minced
  • ½ tsp Cajun seasoning
  • ¼ tsp paprika
  • ½ tsp onion powder
  • ½ cup (115 g) cream cheese, softened
  • ¼ cup (25 g) Parmesan cheese, shredded
  • 1 tbsp parsley, chopped
  • ½ cup (50 g) Panko breadcrumbs (optional)
  • 1 tbsp lemon juice

For the Parmesan Mashed Potatoes

  • 4 large russet potatoes, peeled & cubed (about 2 lbs / 900 g)
  • ¼ cup (57 g) butter
  • ½ cup (120 ml) heavy cream
  • ½ cup (50 g) Parmesan cheese, shredded
  • Salt & pepper, to taste

For the Sautéed Asparagus

  • 1 bunch asparagus, trimmed
  • 1 tbsp (15 ml) olive oil
  • 1 tbsp (14 g) butter
  • 2 cloves garlic, minced
  • ½ tsp salt
  • ½ tsp black pepper
