For the Salmon & Stuffing
- 2 large salmon fillets (skin-on or off)
- ½ lb (225 g) shrimp, peeled, deveined, and chopped
- ½ cup (60 g) lump crab meat
- 2 tbsp (28 g) butter
- 1 tsp garlic, minced
- ½ tsp Cajun seasoning
- ¼ tsp paprika
- ½ tsp onion powder
- ½ cup (115 g) cream cheese, softened
- ¼ cup (25 g) Parmesan cheese, shredded
- 1 tbsp parsley, chopped
- ½ cup (50 g) Panko breadcrumbs (optional)
- 1 tbsp lemon juice
For the Parmesan Mashed Potatoes
- 4 large russet potatoes, peeled & cubed (about 2 lbs / 900 g)
- ¼ cup (57 g) butter
- ½ cup (120 ml) heavy cream
- ½ cup (50 g) Parmesan cheese, shredded
- Salt & pepper, to taste
For the Sautéed Asparagus
- 1 bunch asparagus, trimmed
- 1 tbsp (15 ml) olive oil
- 1 tbsp (14 g) butter
- 2 cloves garlic, minced
- ½ tsp salt
- ½ tsp black pepper
