Stuffed Salmon with Mac and Sweet Glazed Bites

Directions

  1. Prepare the salmon filling: In a bowl, mix chopped shrimp, cream cheese, mozzarella, Parmesan, garlic powder, paprika, salt, and pepper until creamy and well combined.
  2. Stuff the salmon: Slice each salmon fillet lengthwise to create a pocket. Fill with the shrimp-cheese mixture and lightly brush with olive oil and lemon juice.
  3. Bake the salmon: Preheat oven to 190°C (375°F). Place stuffed salmon on a lined baking tray and bake for 15–18 minutes until the salmon is flaky and the filling is bubbly.
  4. Cook the macaroni: Boil macaroni in salted water until al dente. Drain and set aside.
  5. Make the cheese sauce: In a saucepan, melt butter and stir in flour. Cook for 1 minute, then slowly whisk in milk until smooth. Add cheddar and mozzarella cheese and stir until melted and creamy. Season with salt and pepper. Toss in the cooked macaroni until well coated.
  6. Prepare the sweet glazed bites: In a skillet, melt butter over medium heat. Add cubed sweet potatoes and cook for 8–10 minutes until tender. Stir in honey, cinnamon, and a pinch of salt. Cook another 2–3 minutes until caramelized and glossy.
  7. Serve: Plate the stuffed salmon alongside the creamy mac and sweet glazed bites. Garnish with fresh parsley for a bright finish.
