Ingredients

For the Spicy Tuna

  • 200 g (7 oz) sushi-grade tuna, finely diced
  • 2 tbsp Japanese mayonnaise (or regular mayo)
  • 1–2 tsp sriracha (adjust to taste)
  • 1 tsp soy sauce
  • ½ tsp sesame oil
  • 1 tsp finely chopped green onion
  • Toasted sesame seeds (optional)

For the Sushi “Taco Shells”

  • 2 cups (400 g) cooked sushi rice
  • 1 tbsp rice vinegar
  • 1 tsp sugar
  • Pinch of salt
  • 4 nori sheets (cut in half)
  • Oil, for crisping

For the Toppings

  • 1 ripe avocado, sliced
  • ¼ cup cucumber, finely julienned
  • Pickled ginger (optional)
  • Extra sriracha or spicy mayo drizzle
  • Microgreens or sesame seeds for garnish
