- 225 g raw shrimp, peeled and deveined (8 oz)
- 200 g rice noodles (7 oz), or substitute glass noodles, ramen, or vermicelli
- 1 small shallot, finely chopped (30 g / 1 oz)
- 2 tablespoons vegetable oil (30 ml)
- 2 cloves garlic, minced (6 g)
- 1 tablespoon red curry paste (15 g)
- 400 ml coconut milk (1 2/3 cups)
- 500 ml chicken or vegetable broth (2 cups)
- 1 tablespoon fish sauce (15 ml)
- 1 teaspoon lime juice (5 ml)
- 1 teaspoon brown sugar (5 g)
- ½ cup chopped fresh cilantro (8 g)
- Optional: sliced chili or red pepper flakes for heat
