- Preheat the Oven
Preheat your oven to 200°C (400°F). Line a baking sheet with parchment paper or lightly grease it. - Prepare the Filling
In a large bowl, combine shredded chicken, shredded cheddar cheese, sour cream, chopped onion, cumin, chili powder, garlic powder, salt, pepper, and optional chilies. Mix until well combined. - Assemble the Chimichangas
Place a tortilla on a flat surface. Spoon a generous portion of the chicken mixture into the center. Fold the sides over the filling, then roll tightly from bottom to top. Repeat with remaining tortillas and filling. - Bake
Place the chimichangas seam-side down on the prepared baking sheet. Lightly spray or brush the tops with oil to help them crisp. Bake for 15–20 minutes, or until golden brown and heated through. - Serve
Remove from the oven and let rest for 2–3 minutes. Serve with salsa, guacamole, sour cream, or a sprinkle of fresh cilantro.
