Chi-Chi's Baked Chicken Chimichangas

Directions

  1. Preheat the Oven
    Preheat your oven to 200°C (400°F). Line a baking sheet with parchment paper or lightly grease it.
  2. Prepare the Filling
    In a large bowl, combine shredded chicken, shredded cheddar cheese, sour cream, chopped onion, cumin, chili powder, garlic powder, salt, pepper, and optional chilies. Mix until well combined.
  3. Assemble the Chimichangas
    Place a tortilla on a flat surface. Spoon a generous portion of the chicken mixture into the center. Fold the sides over the filling, then roll tightly from bottom to top. Repeat with remaining tortillas and filling.
  4. Bake
    Place the chimichangas seam-side down on the prepared baking sheet. Lightly spray or brush the tops with oil to help them crisp. Bake for 15–20 minutes, or until golden brown and heated through.
  5. Serve
    Remove from the oven and let rest for 2–3 minutes. Serve with salsa, guacamole, sour cream, or a sprinkle of fresh cilantro.
