- Prepare the lobster tails:
Using kitchen shears, cut the top of each lobster shell lengthwise and gently lift the meat out, keeping the base attached. Place the meat on top of the shell.
In a small bowl, combine olive oil, paprika, garlic powder, salt, and black pepper. Brush the mixture over the lobster meat.
Heat a grill pan or skillet over medium-high heat. Sear lobster tails meat-side down for 3–4 minutes, then flip and cook 2–3 minutes more until opaque and cooked through (internal temp ~140°F/60°C). Let cool slightly, then chop the meat into bite-sized pieces, discarding the shells. - Cook the pasta:
Boil fettuccine in salted water until al dente according to package directions. Drain and set aside, reserving ½ cup pasta water. - Make the creamy sauce:
In a large skillet, melt butter over medium heat. Add minced garlic and sauté for 30 seconds until fragrant.
Pour in heavy cream and bring to a gentle simmer. Stir in Parmesan, salt, and black pepper, cooking 2–3 minutes until sauce thickens slightly. - Combine pasta and sauce:
Add cooked fettuccine to the skillet, tossing to coat. If sauce is too thick, stir in reserved pasta water to reach desired consistency. Mix in chopped parsley. - Grill the asparagus:
Toss asparagus with olive oil, salt, and pepper. Grill or sear in a hot skillet for 3–5 minutes until tender-crisp with slight char marks. - Assemble and serve:
Plate the creamy fettuccine, dividing it among four plates. Top each serving with lobster pieces and arrange grilled asparagus on the side. Garnish with extra parsley and serve immediately.
