Directions

  1. Prepare the Chimichurri Sauce
    In a bowl, combine parsley, cilantro, garlic, red wine vinegar, olive oil, lime juice, red pepper flakes, salt, and black pepper. Mix well and set aside to allow flavors to meld.
  2. Marinate the Shrimp
    Place the shrimp in a shallow dish, drizzle with olive oil, and season lightly with salt and black pepper. Pour half of the chimichurri sauce over the shrimp, tossing to coat evenly. Let marinate for 15–20 minutes.
  3. Skewer the Shrimp
    Thread the shrimp onto soaked skewers, keeping them in a single layer for even cooking.
  4. Grill the Shrimp
    Preheat the grill or grill pan over medium-high heat. Grill the shrimp skewers for 2–3 minutes per side, until pink and slightly charred. Avoid overcooking to keep the shrimp tender.
  5. Serve
    Arrange the grilled shrimp skewers on a platter, drizzle with remaining chimichurri sauce, and serve immediately.
