Grilled Garlic Herb Butter Lobster Tails

Directions

  1. Butterfly the lobster tails:
    Use kitchen shears to cut through the top shell down to the tail, being careful not to cut the meat. Gently pull the shell apart and lift the meat up and out, resting it on top of the shell (still attached at the base).
  2. Make the garlic herb butter:
    In a small bowl, combine melted butter, minced garlic, lemon juice, parsley, paprika, salt, and pepper. Stir until well mixed.
  3. Preheat the grill:
    Heat your grill to medium-high, about 400–450°F (200–230°C).
  4. Grill the lobster tails — first side:
    Brush the lobster meat generously with garlic butter. Place lobster tails flesh-side down on the grill and cook for 4–5 minutes until lightly charred.
  5. Flip and finish grilling:
    Turn the lobster tails shell-side down, brush with more garlic butter, and grill for another 3–4 minutes, until the meat is opaque and tender.
  6. Final basting:
    Just before serving, baste lobster meat with the remaining garlic butter for maximum flavor and shine.
