Marinated Cucumbers, Onions, and Tomatoes

Directions

  1. Prepare the Vegetables
    Wash and slice the cucumbers into thin rounds. Halve the cherry tomatoes and thinly slice the red onion.
  2. Combine the Vegetables
    In a large mixing bowl, add the cucumbers, tomatoes, and sliced onion. Toss gently to combine.
  3. Make the Marinade
    In a small bowl, whisk together vinegar, olive oil, sugar, salt, black pepper, and dried oregano until well blended.
  4. Marinate
    Pour the marinade over the vegetables and toss until evenly coated.
  5. Chill
    Cover and refrigerate for at least 30 minutes to allow the flavors to blend. For best results, marinate for 1–2 hours.
  6. Serve
    Before serving, toss again and sprinkle with fresh parsley if desired.
