Pickled Beets

Directions

  1. Prepare the Beets
    Wash the beets thoroughly, trim tops and roots, and peel if desired. Slice or cut into wedges or rounds, depending on your preference.
  2. Cook the Beets
    Place the beets in a large pot of boiling water. Simmer for 25–30 minutes, or until tender when pierced with a fork. Drain and set aside.
  3. Make the Pickling Liquid
    In a separate saucepan, combine vinegar, sugar, cloves, allspice, and salt. Bring to a boil, stirring until the sugar dissolves completely.
  4. Combine and Jar
    Place cooked beets into sterilized jars. Pour the hot pickling liquid over the beets, ensuring they are fully submerged.
  5. Cool and Refrigerate
    Allow the jars to cool to room temperature before sealing. Refrigerate for at least 24 hours to let the flavors develop.
