Directions

  1. Prepare the dough: In a small bowl, combine warm water, yeast, sugar, and olive oil. Let sit for 5–10 minutes until foamy. Add flour and salt, knead until smooth and elastic (8–10 minutes). Cover and let rise for 1 hour until doubled in size.
  2. Prepare the tomato sauce: Heat olive oil in a small pan over medium heat. Add minced garlic and sauté for 30 seconds until fragrant. Stir in crushed tomatoes, oregano, salt, and pepper. Simmer 10–15 minutes until slightly thickened. Let cool.
  3. Pre-cook the seafood: Drizzle a little olive oil in a skillet over medium heat. Add shrimp, squid, mussels, and clams, cooking 1–2 minutes until just starting to turn opaque. Season lightly with salt and pepper, then set aside.
  4. Assemble the pizza: Preheat oven to 250°C (480°F) with a pizza stone or steel if available. Roll out dough thinly on a floured surface and transfer to a baking tray or stone. Spread a thin layer of tomato sauce evenly over the dough. Sprinkle mozzarella cheese, then arrange shrimp, squid rings, mussels, and clams evenly. Scatter onion slices and drizzle lightly with olive oil.
  5. Bake: Bake 8–10 minutes until the crust is golden-brown and slightly charred at the edges, and the cheese is melted and bubbling.
  6. Finish and serve: Sprinkle chopped parsley on top for a fresh, bright flavor. Serve immediately on a rustic board or plate for an authentic Italian touch.
